Add vegetables, pancake mix to a bowl.
Optional: Add long pepper for spicy flavor.
Mix well.
Add seafood for scallion pancake and 175mL of water (per serving) to the bowl.
Mix well.
Heat 2 Tablespoon of olive oil to a pan.
Add 1 serving portion of ingredients from the bowl.
Spread them flat evenly over the pan.
Leave to cook on medium-high heat for 4~6 minutes.
Flip the pancake.
Add 1 Tablespoon of olive oil on the sides of the pan so the oil flows to beneath the pancake.
Press down with spoon.
Leave to cook on medium-high heat for 4~6 minutes.
Flip one more time.
Leave to cook 1~2 minutes on medium-high heat.
Repeat steps 3 & 4 per additional servings.
